After watching the Waldorf salad episode of Fawlty Towers the other day, I've had a rather peculiar craving for something a bit apply, a touch walnutty, but without any Basil.
As I don't eat mayonnaise, rather a key ingredient, I decided to satisfy another craving and make up a dressing with a maple syrup base. Nom! The salad was just lettuce, apple pieces and toasted walnuts (alas, no celery), but the dressing really is what made it.
ingredients:
2-3 tbsp. white wine vinegar
1 tbsp. extra virgin olive oil
1 tbsp. high-grade maple syrup
1 tsp. prepared mustard (plain English preferrably)
1 small garlic clove, smushed
a few soft pitted dates, chopped
the green of 1 spring onion, chopped pretty finely
pinch salt
method:
Mix everything together, crush the garlic, then leave it to sit for at least 30 minutes. When you're ready to serve, remove the garlic clove, give it a shake and drizzle over your salad.
If you have more time, try roasting the garlic first, as that softens the pungency and really add a sweetness that complements the maple syrup. If you have some, also try adding some fresh coriander, as it adds a surprising depth to an already (if I say so myself) divine dressing.
Next time I make it, I'll remember to take a picture of this, because it was delicious and quite perfectly autumnal!
