A word to the wise: if you have not got a Matthew to pull a quick and simple meal together with little or no effort after a triumphant, yet long day, help is on the way. A healthy smear of wholegrain mustard makes for an even more delectable beans on toast. Add a sprig of chive and you've got a meal that's delicious and nutricious and even a bit bombicious.
Beans on Toast by Matthew
ingredients
1 tin baked beans, heated
3 slices bread, toasted
wholegrain mustard, smeared
sprig chive, garnished
method
Slice bread of your choice into as many slices as you want, and/or can fit in your toaster. Place in toaster, but don't press down. Open tin, empty into saucepan and set hob to a medium heat. Just as the beans start to rumble softly to each other, press the toast down. When the toast pops the beans will be ready. Butter toast if desired, otherwise smear a healthy dollop of wholegrain mustard from crust to crust and around the edges, then slop the beans down. Snip your chive into a couple of pieces and allow to fall from your hand onto the bean-topped toast with compelling nonchalance. Scrummy
