Though surprisingly quick, this meal has swiftly become a Erqsome to Wave household favourite. It's got just the right combination of stodge and delicious to cure any Sunday hangover that carries over to Monday.
ingredients:
1 tablespoon extra virgin olive oil
2 large garlic cloves, minced
1 large onion, thinly sliced into rings
1 punnet mushrooms, sliced
1 tablespoon all-purpose flour
1 400 ml tin whole plum tomatoes, drained tomatoes only
1/2 cup red wine
1/2 cup double cream (note, the same amount of plain yogurt, sour cream or soya milk would work just as well)
1/4 teaspoon ground nutmeg
100 g fresh wild rocket or spinach
tagliatelle for 2, freshly cooked
method:
Heat oil in a heavy-bottomed, large saucepan (a Dutch pot or the pot of a pressure cooker without the lid would do well). Add garlic
and onions, sauté on low heat for 15 mintues, or until softened but not brown. Just before you add the mushrooms, in a separate saucepan, put enough water to cover tagliatelle over high
heat, to boil.
Add mushrooms to sauce and cook until tender, about 10 minutes. Add flour and stir 1 minute. Add wine and tomatoes and cook, stirring frequently, until mixture begins to visibly thicken about 3 minutes. Mix in cream and nutmeg. Season mushroom mixture to taste with salt and pepper.
Add tagliatelle to pot, along with the rocket or spinach, and toss well to blend. The leaves will steam naturally in the heat of the pasta and sauce. Serve immediately, with a dash of fresh pepper ground over top, preferably accompanied by thick chunks of bread to mop up the sauce after you've finished the pasta.
Because you're cooking the pasta while you're cooking the sauce (as opposed to cooking the sauce and letting it settle into itself), this is the perfect 'I just got home from work and I'm hungry' dinner -- great for surprise dinner guests as well as it can be prepared without thinking over a glass or two of wine. Yum!
